Only cut from the HEART of the ox tongue.
This premium cut is exactly the cut that foodies love to use for Korean BBQ, Yakiniku, grilling or searing. Most of the undesirable parts of the tongue have been trimmed, leaving the heart of the tongue for the best texture. Each piece is sliced to 3.5mm thick, a perfect thickness for grilling to have a nice caramelisation.
Ox tongue’s heart has a very special texture that you cannot find in other cuts of beef. The heart of the tongue is in white, it is very tasty and spongy, and usually being served as a premium dish in restaurants because you may only get 13% to 20% of this cut from a whole tongue.

Our ox tongue is originally from local farms in the beautiful land of Ireland.
Grill with high heat to have a very good caramelization, this would elevate the flavour of the fat and the meat to another level.
Cooking Tips
- Simply grill the 3.5mm tongue and serve with sauces such as “ssamjang”, “Yakiniku Sauce”, “salt with sesame oil” or “soy sauce with your own recipe”.
- Marinate with salt and black pepper corn before grilling.
- Defrost the whole pack unopened in a fridge for 12 to 24 hours before usage. Or immerse in cold water for faster results.

How to make ox tongue Crispy?
Grill with flame at a high heat temperature of 230°C to 260°C, the edge will become crispy and you will get a good caramelisation across the whole ex tongue. Ox tongue has a high content of fat, and it is forgiving to cook, don't be afraid to grill it a bit longer.
